How to prepare the recipe for pasta with artichoke cream

  1. First clean the artichokes by removing the outermost layer of the stem, the hardest leaves and the tips of the same and then move on to the internal beard. If you are not practical you can opt for already cleaned artichoke hearts or for a frozen product.
  2. In a pan heat the oil with the garlic clove then add the artichokes. After having browned them for a few minutes, cover with the broth, add a pinch of salt and let them cook for 10 minutes , until they are tender.
  3. Meanwhile, cook the pasta in abundant salted water for the time indicated on the package.
  4. Once the artichokes are ready, remove the clove of garlic, add the chopped parsley and blend until creamy. Add the Parmesan and that's it.
  5. Drain the pasta and season with the artichoke cream, adjusting the consistency with the cooking water, then serve hot.

Variants of pasta with artichokes

As mentioned in the introduction, you can make the dish even more creamy by combining the artichokes, before blending them, 150 g of robiola or philadelphia . As an alternative to pasta with artichoke cream and robiola, for a tastier first course, brown 100 g of pancetta separately and add it to the pasta immediately after mixing it with the cream.
