Pasta with artichoke cream

Pasta with artichoke cream is undoubtedly one of those recipes that will win over artichoke lovers but not only. In fact, the idea of reducing them to a cream is perfect for introducing this ingredient to even those who don't appreciate its consistency.
However, there are different ways of preparing the artichoke cream: pure, adding just a little parmesan, with bacon or even adding a creamy cheese such as robiola. We will reveal all the recipes, from the simplest to the most delicious so that you can choose the one that is best for you.
How to prepare the pasta with artichoke cream recipe
- First clean the artichokes by removing the outermost layer of the stem, the hardest leaves and their tips and then move on to the internal beard. If you are not practical, you can opt for already cleaned artichoke hearts or a frozen product.
- In a pan, heat the oil with the garlic clove then add the artichokes. After browning them for a few minutes, cover with the broth, add a pinch of salt and let them cook for 10 minutes , until they are tender.
- In the meantime, cook the pasta in plenty of salted water for the time indicated on the package.
- Once the artichokes are ready, remove the garlic clove and keep a spoonful aside. Add the chopped parsley and blend until creamy. You can also add a little grated cheese if you like
- Drain the pasta and season it with the artichoke cream, adjusting the consistency with some cooking water, then serve hot.

As mentioned in the introduction, you can make the dish even creamier by adding 150 g of robiola or Philadelphia cheese to the artichokes before blending them.
Variations of artichoke pasta
As an alternative to pasta with artichoke and robiola cream, for a tastier first course, brown 100 g of bacon separately and add it to the pasta immediately after mixing it with the cream. Do you prefer the first course or the pasta with artichoke cream and bacon?

storage
The artichoke pasta can be kept for a couple of days in the refrigerator , well covered in cling film. You can reheat it either in a pan or in the microwave before consuming it.
