How to prepare the pasta with artichoke cream recipe

  1. First clean the artichokes by removing the outermost layer of the stem, the hardest leaves and their tips and then move on to the internal beard. If you are not practical, you can opt for already cleaned artichoke hearts or a frozen product.
  2. In a pan, heat the oil with the garlic clove then add the artichokes. After browning them for a few minutes, cover with the broth, add a pinch of salt and let them cook for 10 minutes , until they are tender.
  3. In the meantime, cook the pasta in plenty of salted water for the time indicated on the package.
  4. Once the artichokes are ready, remove the garlic clove and keep a spoonful aside. Add the chopped parsley and blend until creamy. You can also add a little grated cheese if you like
  5. Drain the pasta and season it with the artichoke cream, adjusting the consistency with some cooking water, then serve hot.

As mentioned in the introduction, you can make the dish even creamier by adding 150 g of robiola or Philadelphia cheese to the artichokes before blending them.

Variations of artichoke pasta
