How to prepare the recipe for poached artichokes

  1. First clean the artichokes by removing the tips, the outer leaves, the inner beard and the outer layer of the stem, which is too tough. Divide them in four and put them in a bowl filled with water acidulated with the juice of a lemon, leaving them for 30 minutes .
  2. Drain them well from the water and transfer them to a pan with the oil and the clove of garlic.
  3. Brown them for 2 minutes on high heat then cover them flush with water. Add a pinch of salt, cover half with the lid and cook for about 30 minutes or until the liquid is almost completely absorbed.
  4. Finally add the desalted capers and black olives and leave to flavor for a few minutes.
