Provençal green beans are a quick and easy recipe: with just a few ingredients, they can add flavor and color to the dish.

Provençal green beans are a typical side dish from the south of France, more precisely from Provence where tomatoes are used a lot in the kitchen. It is precisely the cherry tomatoes which, together with garlic and aromatic herbs, manage to enrich and perfume the simplicity of the green beans. Our recipe uses oil and not butter, to obtain a truly light and digestible dish. They will thus represent a tasty and simple side dish to combine with any type of second course. However, no one forbids consuming this dish as a single dish for a light lunch or dinner!

Preparation of the Provençal green beans recipe

  1. Clean the green beans by removing the ends and rinse them under running water.
  2. Put them in a saucepan full of salted water and boil them for 5 minutes . Then drain them and pass them under cold water.
  3. Wash the cherry tomatoes and blanch them whole in boiling water for a minute .
  4. Then pass them under cold water, peel them, cut them in half and remove the seeds.
  5. In a pan, heat the oil with the thyme and a clove of garlic.
  6. When the garlic is golden, remove it and pour the green beans and cherry tomatoes into the pan.
  7. Sauté for a couple of minutes over high heat and add salt and pepper.
  8. Your green beans are ready… bring to the table!

If you like, enrich the recipe with a finely sliced ​​onion and use your favorite aromatic herbs as an alternative to thyme. You can prepare your side dish in advance and warm it up just before serving, or eat it warm: it will be delicious even like this!
