Pumpkin cream flavored with ginger and a heart of DOP gorgonzola
Pumpkin cream with DOP gorgonzola and ginger is a truly delicious first course, which combines the sweetness of pumpkin with the strong flavor of gorgonzola.
Pumpkin cream soup is an easy dish to prepare and which pairs perfectly with different ingredients: today we are going to prepare a pumpkin cream with DOP gorgonzola and ginger flavour, a reinterpretation of the traditional dish that is decidedly original and tasty .
In this recipe we will use grated ginger, which releases its flavors and essences to the maximum, and gorgonzola DOP, a cheese that almost becomes the absolute protagonist of the dish thanks to its inimitable aroma and taste which made it one of the first Italian cheeses to have obtained DOP recognition .

Preparation of the DOP pumpkin and gorgonzola cream
- Start cooking the pumpkin, which you can prepare in the oven or in a pan. Cut it into cubes after having removed the peel and internal seeds and cook it in a pan with a drizzle of extra virgin olive oil and the finely chopped shallot for about 15 minutes.
- Once the pumpkin has softened, start pouring in the vegetable broth gradually.
- When the pumpkin is tender enough, blend it with an immersion blender , finally add salt and pepper to taste.
- When the time comes to serve the soup, grate fresh ginger on each plate and place a piece of DOP gorgonzola on the plate, literally letting it sink into the soup and creating a real heart of gorgonzola .
