If you are looking for an easy pumpkin-based recipe, you really can't miss the flan recipe. Pumpkin flans are nothing more than soft savory pies made with pumpkin, eggs and grated Parmigiano Reggiano.

The recipe is really simple, you start by cooking the pumpkin in the oven and then blend it to obtain a puree to which you can add the other ingredients of the mixture. What makes the flans so soft and fluffy is the particular type of cooking which is done in the oven, but in a bain-marie . Have fun enriching the dough as you prefer with diced cheeses, diced speck, aromatic herbs and spices!

Ingredients

For the pumpkin flan

  • Cleaned pumpkin – 500 g
  • Eggs – 4
  • Whole milk – 150 ml
  • Fresh cream – 150 ml
  • Aromatic herbs (sage and rosemary) – 2 sprigs
  • Grated Grana Padano – to taste
  • Extra virgin olive oil – to taste
  • Fine salt – to taste
  • Pepper – to taste

How to prepare the pumpkin flan recipe

First clean the pumpkin : cut it into not too large slices, remove the peel and seeds then place them on a baking tray covered with baking paper. Season with oil , a few sage leaves, rosemary needles , salt and pepper .

Cook at 200°C for approximately 15 minutes or until they are tender when pierced with a fork, then remove from the oven and leave to cool.

Blend the cooked pumpkin and place the puree in a bowl. Add the grated cheese , milk , cream , eggs , salt and pepper and mix.

Pour the mixture thus obtained into special well-buttered aluminum or ceramic baking cups , taking care to fill them approximately 2/3 full . Take a baking dish, fill it halfway with hot water and place the cups inside.

Cook in a bain-marie in a preheated oven at 160°C for approximately 35 minutes . After this time, remove the savory pies from the oven and let them cool for a few minutes before serving.

The best way to bring these delights to the table is to accompany them with a cheese fondue . Both taleggio and gorgonzola are fine, but also more delicate cheeses such as crescenza. To prepare it, melt 200 g of cheese with 50 ml of milk or cream then transfer to the bottom of the plate and place the flan while it is still hot.

Conservation

The pumpkin pies can be stored in the refrigerator , covered with cling film, for 2-3 days . Before serving them you can reheat them in the oven.
