Stewed wild boar

There are some recipes that take your mind back in time and among these is stewed wild boar. So different from the modern and almost minimalist preparations we are used to, this one continues to lose its charm although fewer and fewer people decide to try their hand at this delicacy. In fact, if the goodness of stewed wild boar is indisputable, the same cannot be said about the speed of its preparation.
The stewed wild boar recipe requires time : in a first phase, to ensure that the meat loses its gamey flavor (hence the marinating with wine), and then for the long, slow cooking, which is essential for obtaining soft and succulent meat. Ingredients
For the marinade
- Wild boar – 1 kg
- Red wine – 750 ml
- Carrot – 1
- Celery – 1 stalk
- Onion – 1
- Juniper berries – 4
- Cloves – 4
- Black pepper – 4 grains
- Sage – 2 leaves
- Rosemary – 1 sprig
- Laurel – 2 leaves
For cooking
- Red wine – 250 ml
- Peeled tomatoes – 400 g
- Meat broth (also stock cube) – to taste
- Carrot – 1
- Celery – 1 stalk
- Onion – 1
- Garlic – 2 cloves
- Extra virgin olive oil – 4 tablespoons
- Fine salt – to taste
- Pepper – to taste
- Nutmeg – 1 pinch
- Ground cinnamon – 1/2 teaspoon
Preparation
How to prepare the stewed wild boar recipe
First, cut the wild boar meat into 3cm pieces and place them in a large bowl. Also cut a peeled carrot , a celery stalk and an onion into pieces and add them to the container together with half the aromatic herbs , cloves , juniper and peppercorns .
Cover with the red wine , mix and leave to marinate covered with a clean cloth for 8 hours : you can do this operation in the evening and prepare the recipe the next day. Why red wine? It will help remove the “gamey” taste from the meat.
Once the marinating time has passed, drain the meat and vegetables by pouring everything into a colander. In a pan, brown chopped celery, carrot, onion and garlic with a few tablespoons of oil .
Then add the chopped meat and aromatic herbs and blend with a glass of red wine .
Add the tomato pulp and start cooking. It will take approximately 3-4 hours depending on the age of the animal used: the older it is, the longer it will need to be cooked. During this period of time, mix, possibly adding hot water or meat broth if it dries too much. In fact, the meat must always be barely covered. About halfway through cooking, or in any case after a couple of hours, add salt .
Only at the end of cooking, flavor with cinnamon and nutmeg . As soon as the meat is nice and tender, your stewed wild boar is ready to be served.
There is no better way to accompany stewed wild boar than with a portion of polenta or boiled potatoes.

Conservation
You can place the stewed wild boar in an airtight container and keep it in the refrigerator for up to 2 days. Heat it in a pan, adding a little water if necessary. It is also possible to freeze stewed wild boar for up to four months. When ready to consume it, let it defrost in the refrigerator and then heat it in a pan, always with a little water.
