How to prepare the asparagus and sausage risotto recipe

  1. First wash the asparagus under running water. Flex the stem in order to remove the woody part and cut the remainder into rings, but leaving the tips whole.
  2. Remove the casing from the sausage and crumble it with your hands in a pan.
  3. Add the asparagus stems and brown for a few minutes over medium heat.
  4. Add the rice, toast it for two minutes then blend with the white wine.
  5. When you no longer smell alcohol rising from the pan, you can start cooking the rice itself, adding the boiling broth one ladle at a time. In fact, for a perfectly cooked rice, the edge should only be added when the previous one has been absorbed, making sure that the rice is always just covered.
  6. It will take approximately 16-20 minutes before it is ready. Remember to add the asparagus tips 5 minutes before the end of cooking and add salt.
  7. When cooked, stir in the butter , season with a grind of black pepper and serve.

You can easily prepare risotto with wild asparagus and sausage following practically the same recipe.
