The sauce is prepared during the cooking time of the pasta and, very importantly, in addition to the smoked salmon you can use the fresh one. You will get a pasta with fresh salmon and asparagus, without cream of course, ideal for all occasions and also excellent as a single dish. Our advice is to use fresh egg pasta if you want to further ennoble the preparation.

How to prepare the asparagus and salmon pasta recipe

  1. First wash the asparagus under running water. Remove the final part of the stem and cut the remainder into chunks, but leaving the tip whole .
  2. In a pan heat the oil with the clove of garlic, add the asparagus and cook over medium heat for about ten minutes, adding a few tablespoons of water if necessary.
  3. Cut into strips and add the smoked salmon with asparagus when cooked, just by blowing for a few minutes. Finally, season with salt and pepper.
  4. Cook the pasta in abundant salted water for the time indicated on the package then drain and toss in the pan with the sauce, stirring with a drizzle of extra virgin olive oil added raw.

The preparation of the variant with fresh salmon is very similar. Cut 300 g of fresh salmon into cubes and cook it in a pan directly together with the asparagus into small pieces . In this case it should not be necessary to add water. After 10 minutes of cooking, season with salt and pepper and set aside until the pasta is ready.

Pasta with smoked salmon, asparagus and cherry tomatoes

The simplest way is to add 300 g of halved cherry tomatoes directly to the pan with the asparagus. However, we did some tests and found that cooking them in a separate pan with a drizzle of oil and a pinch of salt the flavors remain more defined. Then add them to the pasta at the end, after having sautéed it with asparagus and salmon: you will feel what a difference!

With a few more steps your pasta with asparagus will make an incredible leap in quality. Cook the vegetables in a pan with the garlic clove and oil, without adding the salmon. Once tender, transfer them to the jug of the immersion blender, add 100 ml of cooking cream (or 100 ml of broth or cooking water) and blend until you obtain a cream of salt and pepper to be adjusted. Brown the smoked salmon in a pan, toss the well-drained pasta and finally whisk everything with the asparagus cream: a real delight!

True, cream has recently taken a back seat, but try adding it to asparagus and salmon once cooked. 200 ml of the fresh one will be enough to cook for a few minutes with the sauce to give this first course a unique creaminess, worthy of the best restaurants.
