Preparation of the Tom Kha Gai recipe

  1. Start by cleaning the chicken and cutting it into small pieces and then putting it in a pot with plenty of salted water.
  2. Let it cook for 15 minutes and until it becomes soft enough.
  3. While you wait, chop the lime leaves and cut the lemongrass into strips to add both ingredients to the chicken.
  4. Also cut the galangal (if you can't find it you can use fresh ginger root) into slices and pour this into the pot as well.
  5. Do the same with the chilli (better if cut into small pieces) and mix.
  6. Add coconut milk, sugar (if you don't find palm sugar you can use cane), sliced ​​mushrooms and fish sauce to the cooking chicken and cook until it boils, taking care to mix from time to time. just to mix the ingredients well together.
  7. At this point add the lime juice and let it cook for another five minutes , turn off the heat and mix everything for one last time.
  8. Thai soup made from chicken and coconut milk is finally ready to be served and enjoyed.


This soup should be eaten on the spot. Alternatively, it can be kept in the fridge for 1 or 2 days if well placed in an airtight container. Before serving it is advisable to heat it on the stove.
