How to make the pistachio pancakes recipe

  1. Combine the egg and milk in a bowl and mix quickly.
  2. Stir in the two flours and the baking powder and mix everything with a whisk until you get a smooth and rather thick batter.
  3. Heat a non-stick pan and lightly butter it. Form piles of dough with the help of a spoon until you get pancakes of the size you prefer. We advise you to stay on 10 cm.
  4. Let them cook over medium heat and when you see that bubbles begin to form on the surface it is time to turn them with the help of a spatula. Continue cooking on the other side as well for a few minutes.
  5. As they are ready, arrange them one on top of the other on a plate, placing a teaspoon of pistachio cream between each.
  6. Serve garnished with grains while they are still hot.

Pistachio pancakes: variants

To prepare the pistachio filled pancakes without butter, prepare the batter according to the recipe. Then cook it in a lightly oiled pan and, when bubbles have formed, turn the pancake. Immediately place a teaspoon of very cold pistachio cream and cover with more batter. After a couple of minutes, using a kitchen spatula, turn and continue cooking for 3 minutes. Serve garnishing as desired with chopped pistachios.

You can also make pistachio pancakes without eggs. In this case, simply omit the egg provided by the recipe and add 20 ml of milk more . This recipe can also be prepared using a vegetable drink to make pistachio pancakes vegan.

Pancakes should be eaten freshly made as they tend to dry out after a few hours . However, you can keep the batter in the refrigerator , well covered with plastic wrap, even for a whole day.
