How to make pan-fried potato cake

  1. Take the potatoes and boil them in boiling water until they are soft.
  2. Once ready, peel them and place them in a bowl adding salt, pepper, a drizzle of oil and an egg.
  3. Mash everything with a fork, then add the grated cheese and flour.
  4. Once you have obtained a homogeneous mixture, take a large non-stick pan and grease it with a drizzle of extra virgin olive oil.
  5. Remove half the dough and form a sort of potato pizza, about 1-2 centimeters high.
  6. Place it in the pan and stuff it with the ham and scamorza, then close it, sealing it with the other part of the dough.
  7. Leave to cook for about 5-10 minutes on each side , being careful to turn it without breaking it (you can help yourself with a lid or a flat plate).

Your stuffed potato focaccia is finally ready. Enjoy your meal !
