Vegan chocolate crepes

Simple and ideal for a snack, vegan chocolate crêpes are excellent and perfect for filling in many ways.

Vegan desserts are among the most maligned: we mistakenly think that the absence of eggs, butter and milk cannot create something satisfying for the senses. However, the vegan chocolate crêpes will make you think again. Eggless crêpes are easy to make and are also perfect for all those times when you want to prepare a delicious snack but have little time.

As a filling, in addition to the classic hazelnut cream, you can use vegetable whipped cream . I also recommend you try this sweet crepes recipe by filling them with banana puree and peanut butter.

How to prepare the sweet crêpes recipe

  1. Place the flour with the sugar and cocoa in a bowl. Mix quickly and also add a pinch of salt.
  2. Pour in the vegetable drink chosen to taste (I recommend almond or coconut milk for the characteristic flavor they will give to the dessert) mixing with a whisk. You should obtain a smooth mixture without lumps.
  3. Heat a non-stick pan with a diameter of approximately 20 cm and lightly oil it with a pastry brush. If you don't have a brush you can use a sheet of kitchen paper. Pour half a ladle of batter into the hot pan and swirl it to create a thin, even layer.
  4. When the edges begin to lift , using a spatula, turn the crepe over and continue cooking for a few more moments. Transfer the crepes to a plate as they are ready.

Chocolate crepes can be filled with hazelnuts, jams (the sugar-free ones are excellent), peanut butter and bananas, but also yogurt and fruit for a healthy and light breakfast.

Conservation

The batter will keep in the fridge for 12 hours so you can also prepare it in the evening for the morning. Cooked crêpes, on the other hand, can be kept for a couple of days in the fridge covered with cling film or in the freezer, alternating them with sheets of baking paper.
