A dessert with only two ingredients? Here’s the feather cake!

Egg white and sugar are the ingredients needed to prepare the feather cake, a truly spectacular protein dessert.

From time to time the web gives us really incredible quick dessert recipes. The feather cake, for example, seems to have been born in a Russian kitchen and soon became famous not only for its speed of preparation, but also for the total absence of fat .

How can such a cake exist? To find out, all you have to do is get two ingredients: egg whites and sugar and get to work. By taking advantage of the combined oven and steam cooking, you will obtain a truly amazing light cake, protein and low in fat.

Completely covered with a caramel glaze , the feather cake, so called because of its particular consistency, will amaze you at the first taste!

How to prepare feather cake recipe

Feather cake is really a quick and easy dessert and to prepare it you need a spoon to use as a unit of measurement and electric whisks.

  1. To prepare the feather cake, start with the caramel. Put 200 grams of sugar and 75 ml of water in a small pan and cook over medium heat without stirring until the sugar has caramelized, taking on its characteristic amber colour.
  2. In the meantime, separately, whip the egg whites with an electric mixer, adding the remaining 10 tablespoons of sugar little by little.
  3. When the egg whites are stiff and the caramel is ready, you can proceed with assembling the dessert.
  4. Get yourself two trays, a round one of about 22-24 cm in diameter and a larger one that can contain it, even if it is rectangular in shape.
  5. Pour the caramel into the round mold, then cover it with the egg whites , leveling the surface well.
  6. Pour into the largest pan as much water as needed to reach the middle of the mold and bake at 180°C for 25 minutes .
  7. Then take it out of the oven and immediately turn it upside down on a plate to allow the caramel to drip.
  8. Let it cool down and then put it in the fridge for at least a couple of hours before serving.

storage

This light and very light cake can be kept for about 2-3 days in the refrigerator inside a special glass bell jar or inside a container with an airtight lid. We do not recommend freezing.
