Can you think of a dish more representative of Italy than pizza? It is certainly no coincidence that during the coronavirus quarantine we all got our hands dirty and made this dish the symbol of our Saturday evening at home . Yet think about it… at the beginning of its history, pizza was more successful in the USA than here!

We all know the basics: pizza as we know it was born in Naples (in 1889) in honor of Queen Margherita and is prepared with water, flour, yeast, salt and oil. In reality, there are already many theories regarding pizza dough: there are those who leave it to rise for 2 hours , who let it mature for 24 hours and those who do it "without dough". But if we also talk about how to fill the pizza, a real world opens up: you can make the white pizza, the potato pizza, the marinara, the margherita, the capricciosa, the four cheeses, the one with mortadella, the four seasons, pizza with asparagus, with vegetables, mushrooms and gorgonzola, with figs, with onions…

Once you find the right recipe for pizza dough, it's all downhill and you can experiment with different toppings and fillings every time. Also choose the right film and… the evening can take off!

How to season pizza? 10 recipes

Generally the dough for 4 people is made with 400 g of manitoba flour, 600 g of 00 flour, 600 ml of water, 25 g of salt, 12 g of fresh brewer's yeast and 70 ml of EVO oil. 1. The recipe for Roman white pizza (with mortadella)

Roman white pizza is the queen of street food in the capital. The ingredients of the dough are the same as pizza but, instead of tomato and mozzarella, this recipe is seasoned with delicious mortadella. Please note: it should not be confused with focaccia !

The ingredients for the filling are:

  • 10 g of coarse salt to place on the surface
  • oil to taste to brush on the surface
  • mortadella to taste

Pizza marinara (without cheese) owes its name to the sailors who used to bring tomatoes, garlic and basil on their journeys to season a dough similar to bread. Cheese, however, was much more difficult to preserve on long voyages and was therefore not included among the toppings of this rudimentary sailors' pizza.

Even today, together with pizza margherita, it is one of the great classics of our cuisine. Before baking, you need to season the pasta with a sauce made from tomato, oil, chopped garlic, salt and pepper. Remove from the oven, top with basil and it's ready!

  • extra virgin olive oil to taste

3. The recipe and ingredients of capricciosa pizza

Capricciosa pizza is synonymous with strong flavours : its filling, in fact, can boast the presence of olives, artichokes, mushrooms and ham, all on a bed of tomato and mozzarella. Just think that this recipe was born from the need to "empty the fridge" and varied from evening to evening based on the leftovers that the pizza chefs found.

Here are the ingredients, which must all be placed on the surface before baking :

  • 350 g of tomato puree
  • 3 mozzarella
  • 70 g of black olives
  • 15 g of artichokes in oil
  • 15 g of mushrooms in oil
  • 250 g of cooked ham
  • salt, pepper and extra virgin olive oil to taste

The 4 seasons pizza is perfect for the eternally undecided because it contains 4 different toppings in a single dish: black olives, mushrooms, artichokes and ham.

What is the difference between capricciosa and four seasons? Simply the arrangement of the ingredients which in the latter are well separated into the 4 different segments while in the capricciosa they are all scattered on the surface .

White pizza with potatoes is a product of uncertain origin: it seems to be of Neapolitan origin, but its true history is shrouded in an aura of mystery . However, we can tell you, without a shadow of a doubt, that it is not the right recipe if you have decided to stay light: this pizza is really very nutritious and substantial .

The preparation? Very simple: after leavening, season your dough with potatoes cut into very thin slices (this is important, otherwise they will be raw and indigestible ), oil, salt, pepper, mozzarella and rosemary.

The ingredients for the filling are:

  • mozzarella for pizza to taste
  • 4 medium potatoes
  • 2 sprigs of rosemary
  • oil and salt to taste

6. The original recipe for four cheese pizza

Even the 4 cheese pizza was born as a "makeshift" dish: originally pizzerias (which were necessarily also spaghetti restaurants) prepared it with kitchen waste .

What are these famous four cheeses? In reality, you can do as you like: mozzarella and gorgonzola are usually never missing ; to complete everything, then choose Parimigiano, scamorza or fontina… it all depends on your tastes. Place everything on the surface before baking and you're done!

For this pizza without tomato we chose:

  • 80 g of mozzarella
  • 80 g of gorgonzola
  • 80 g of fontina
  • 60 g grated cheese (Grana or Parmesan)
  • extra virgin olive oil, salt and pepper to taste

7. Pizza with vegetables: the recipe

In Spring, pizza with asparagus is the perfect recipe (but in the rest of the year you can easily make changes based on seasonality and make a vegetable pizza with mixed vegetables). The advice, however, is to grill the vegetables or cook them first.

Asparagus, for example, should be blanched for a few minutes in salted water; then, you can arrange them on your pizza and inform! Here are the ingredients:

  • olive oil to taste
  • tomato puree to taste
  • a bunch of fresh asparagus to blanch
  • 2 mozzarella

8. The recipe for pizza with mushrooms (and gorgonzola)

Another recipe for lovers of strong flavors is that of mushroom and gorgonzola pizza . Of uncertain origin, it is also prepared in some variations with cooked ham or sausage; a detail that is respected in all its forms, however, is the absence of tomato (otherwise it is called margherita pizza with mushrooms).

We will use sautéed mushrooms, i.e. cooked in a pan with garlic, oil and parsley for a few minutes. You can easily prepare them while waiting for the dough to rise. You don't need anything else except:

  • 1 pack of gorgonzola
  • sautĂ©ed champignon mushrooms to taste,

9. The recipe for pizza and figs

Pizza with figs is a typically summer recipe (figs, depending on the quality, are in season in June/July, August/September or autumn). We stuff it with 4 ripe figs, 30 g of rocket, 10 walnuts, 2 mozzarella and parmesan flakes, all added after cooking, except the mozzarella.

In the rest of the year, however, if you love sweet and sour flavors we also suggest pairing pears and gorgonzola.

10. The recipe for pizza with onions and radicchio

To end on a high note, we offer you a recipe that is a little more original than usual: pizza with radicchio and red onion from Tropea . Our recipe is vegan but the only difference is in the mozzarella (or cheese); then, simply by omitting the radicchio, with the same procedure, you can prepare an exquisite pizza with onions, also delicious with tuna.

For the rest, while the dough rises, onion and radicchio should be cooked lightly in a pan and caramelized with balsamic vinegar. Once they have cooled, arrange on the pasta with the rest of the filling ingredients and bake. You will need:

  • 1 head of red radicchio
  • 1 mozzarella (vegan)
  • 1 red onion from Tropea
  • extra virgin olive oil to taste
  • coarse salt and pepper to taste
