Preparing carrot muffins in the air fryer without milk or butter is really simple and they are ready in less than 30 minutes.

The air fryer has undoubtedly revolutionized our way of cooking, allowing us to save time and electricity. Today we wanted to experiment with carrot muffins in the air fryer, a perfect treat for breakfast or a snack .

In a certain sense they resemble camille cooked in an air fryer due to the presence of carrots and orange zest in the mixture. However, we will not use almonds (we leave you a possible alternative at the end of the recipe).

How to make air fryer carrot muffins recipe

  1. First, peel the carrots, remove the ends and grate them with the grater with small holes . If you want, you can also blend everything with a kitchen mixer.
  2. Break the egg into a bowl, add the sugar and mix everything with a hand whisk.
  3. Add the oil, the grated orange zest, the sifted flour and yeast and mix again until you obtain a smooth mixture.
  4. Add the grated carrots, mixing this time with a spatula, and transfer the mixture into the muffin cups , filling them two-thirds full. With these doses you should get 6.
  5. Cook in an air fryer at 170°C for 15 minutes, allowing them to cool before serving.

For an even more intense and particular aroma you can replace 30 g of flour with the same weight of almond flour.
