Air Fryer Cauliflower Meatballs

With just a few ingredients you can prepare excellent vegetarian cauliflower meatballs cooked in an air fryer.

Cauliflower is a versatile ingredient, perfect for preparing delicious winter recipes like these air fryer cauliflower meatballs. Light due to cooking but extremely tasty, they are a quick and easy second course that can be prepared in advance and reheated when needed.

The preparation is very simple because once the cauliflower has been boiled (you can also use that left over from other preparations), it will be enough to crush it with a fork and add the classic meatball ingredients : eggs, breadcrumbs, parmesan and parsley. Here are all the steps in detail.

How to make air fryer cauliflower meatballs recipe

  1. First clean the cauliflower by removing the leaves, which you can use for the minestrone, and the florets. Wash them under running water then boil them in boiling salted water for 10-12 minutes. They should be tender but not mushy.
  2. Once ready, drain them and transfer them to a bowl where you mash them with a fork.
  3. Allow to cool, then add the eggs, parmesan, parsley, a pinch of garlic powder and a pinch of salt. Mix well to distribute all the flavors then add the breadcrumbs little at a time until the mixture begins to dry.
  4. Form meatballs the size of a walnut and flatten them slightly then pass them one by one in the breadcrumbs. As they are ready, place them in the air fryer basket.
  5. Season them with a few puffs of oil and cook at 190°C for 12-15 minutes, turning them halfway through cooking. Serve them once they have cooled.

storage

Air fryer cauliflower meatballs will keep for 3-4 days in the refrigerator , closed in an airtight container. You can reheat them in a pan, in the microwave or again in the air fryer.
