Sweet pancakes, also called castagnole, are a typical dessert of the Carnival period, but are also appreciated on other occasions and consumed throughout Italy.

The regions that compete for the authorship of the recipe are many: Abruzzo, Lazio, Marche, Liguria, Veneto and Emilia Romagna. Among the most ancient testimonies of this dessert, there are the recipes reported in a manuscript dating back to the 18th century preserved in the State archive of Viterbo. Ingredients for air fryer pancakes

To make about fifteen pancakes , you need:

  • 150 grams of 00 flour
  • One medium sized whole egg
  • 40 grams of granulated sugar (two heaped tablespoons)
  • 30-35 ml of corn oil
  • 10 grams of baking powder for desserts
  • A sachet of vanillin or vanilla flavouring
  • A pinch of fine salt
  • Half a coffee cup of liqueur to flavor the dough (rum, aniseed liqueur, Strega, etc., according to taste)

How do you prepare pancakes in an air fryer?

Making the dough for the chestnuts is very simple. It can be mixed by hand or in a planetary mixer. You have to add the egg to the flour, and then the seed oil, the liqueur and the other powders, kneading as you go. Finally, add a little salt and continue to knead the mixture until you obtain a soft, non-sticky dough . The dough obtained should be wrapped in transparent film and left to cool in the refrigerator for about 35-40 minutes. At this point, balls can be detached from the dough and formed into chestnuts, rolling the dough between the palms of the hands until the corners are smooth. As far as cooking is concerned, however, you need to cut a piece of baking paper smaller than the fryer basket, so as to allow the air to circulate without problems and not hinder cooking. The fryer, then, should be heated for a few minutes at 200°. Once this is done, it is possible to take half of the balls obtained and place them on the oven paper, after having sprayed the surface of the balls with a little seed oil . After about 4 minutes, it is necessary to turn the fritters in the basket, apply another splash of oil and leave the cooking to complete for another 4-5 minutes, without opening the basket continuously. The pancakes are ready when their surface is completely golden . After removing the first castagnole from the air fryer, roll them in granulated sugar, and then proceed to the second cooking, repeating the steps with the remaining balls. It is essential to cook the castagnole in several moments, because during cooking they swell and could stick to each other.
