Anna potatoes, the typical French recipe

Pommes Anna

Crispy on the outside and soft on the inside, Anna pommes are a typical dish of French cuisine that is easy to prepare with 4 ingredients.

Anna potatoes, or rather pommes Anna, are a typical dish of French cuisine born in the Napoleonic era at the hands of chef Adolphe Dugléré. He dedicated the dish to the attractive courtesan Anna Deslions and since then they have been a sin of gluttony that is really hard to resist. And to think that two ingredients are enough to prepare them…

In fact, to make this French potato pie you only need butter, potatoes, salt and pepper . Sure, the amount of butter is considerable, but the result is beyond imagination. Crispy on the outside and soft on the inside, Anna pommes are the perfect side dish for your main courses of meat.

How to prepare the pommes Anna recipe

  1. First, peel the potatoes and, without washing them, cut them into 2-3 mm thick slices .
  2. Butter the bottom of a baking dish and spread a first layer of potatoes, overlapping them slightly.
  3. Melt the remaining butter and, with the help of a spoon, sprinkle the potatoes. Then season everything with salt and pepper and then proceed with the layers always in the same way.
  4. Bake the French potato pie in the oven at 200°C for 30 minutes , passing it on the grill for the last 3 minutes. Serve it piping hot by inverting it onto a serving plate.

What we have proposed is the basic recipe of the dish but know that as always there is no shortage of reinterpretations . For example, you can add chopped aromatic herbs between one layer and another or enrich everything with slices of cheese or finely sliced onions.
