Eggplant pie is made up of layers of grilled eggplant, tomato sauce, stringy cheese, and ham. Too good!

The preparation is reminiscent of that of Parmigiana but due to the richness of the ingredients we preferred to find another name for it. You all know well that when it comes to traditional recipes it is always better not to create discontent so here is the eggplant pie. To make this recipe so good we think the stringy cheese and the ham which, combined with the classic tomato sauce transform the aubergines into a rich second dish.

Get ready to make the shoe of this greedy mess, but above all be careful because it is an easy recipe that is addictive. Excellent both hot and at room temperature, it is perfect for the summer to be enjoyed even during trips out of town. But let’s see how it is also prepared in the pan variant.

How to prepare the eggplant pie recipe

  1. First wash the aubergines, remove the ends and cut them into slices half a centimeter thick. Grill them on a grill pan for a couple of minutes on each side and place them on a plate as they are ready.
  2. Meanwhile, prepare the tomato sauce by browning the garlic clove with oil. Add the tomato puree, basil, a pinch of salt and cook for 15-20 minutes , until it has shrunk.
  3. Now that all the ingredients are ready, all that remains is to compose the pie. Spread a tablespoon of sauce on the bottom of a baking dish and then begin to form the layers : aubergines, tomato sauce, ham, diced scamorza cheese and parmesan. Continue until you have finished all the ingredients and leaving only tomato, smoked cheese and grated cheese on the last state.
  4. Bake in the oven at 180 ° C for 30 minutes and let it cool before serving, perhaps accompanying it with slices of toasted bread.

In a similar way you can prepare the aubergine pie in a pan. In this case, form the layers in a thick-bottomed pan then cook over low heat for 20-30 minutes , half the time with the lid on. Also in this case it is better to let it cool before serving.


The aubergine pie can be kept in the refrigerator for 2-3 days . You can reheat it in a pan, in the oven or even in the microwave. It is also possible to freeze it, preferably already portioned.
