If you are tired of the usual side dishes, here's how to prepare delicious artichokes pizzaiola style with tomato and mozzarella.

Pizzaiola artichokes are a tasty and rich side dish , perfect to accompany your meat main courses. Preparing them is really simple and, in addition to using fresh artichokes, certainly the tastiest, you can also use good quality frozen ones and prepare them at any time of the year.

In all cases you need artichokes, tomato, mozzarella and oregano to recreate the characteristic taste of pizzaiola. After cooking in the pan for the first time, don't forget to gratinate everything in the oven: this is how they will transform into an amazing recipe!

How to prepare the pizzaiola artichoke recipe

  1. First clean the artichokes by removing the outermost layer of the stem and the hardest, most leathery leaves. Also cut the tips of the artichoke and divide it in half. Remove the beard with a teaspoon or the tip of a knife then slice it not too finely. As they are cut, transfer them to a bowl full of water acidulated with the juice of half a lemon.
  2. In a pan, heat a drizzle of oil and add the garlic clove. Then brown the artichokes with a pinch of salt then add the peeled tomatoes. Cook for about 15 minutes or until tender, then flavor with oregano.
  3. Transfer the artichokes into a baking dish and spread the diced mozzarella on the surface. Complete with a sprinkling of parmesan and grill for 5-10 minutes , just long enough for a nice crust to form.
