How to prepare the recipe for Sicilian stuffed artichokes

  1. First, clean the artichokes : remove the stem, the outermost layer of the leaves and the tips of the leaves. Finally, using a knife or a teaspoon, remove the internal beard.
  2. As they are ready , rinse them under running water and transfer them to a bowl acidulated with the juice of a lemon.
  3. Once you have cleaned all the artichokes, prepare the filling by mixing the breadcrumbs, grated cheese, parsley and garlic chopped with a knife in a bowl.
  4. Season with salt and pepper and add as much oil as needed to moisten the mixture.
  5. Drain the artichokes well and stuff them with the freshly prepared filling, trying to make it penetrate as much as possible between the leaves.
  6. Then place them in a not very large saucepan greased with a drizzle of oil: the artichokes must stand upright with the filling facing upwards and must not be able to move.
  7. Pour an inch of water or broth and a pinch of salt onto the bottom of the pan.
  8. Cover with the lid and leave to cook for about an hour (but this will depend on the size of the vegetables), until the Sicilian pan-fried artichokes are tender. If needed you can always add a little water or broth to facilitate cooking.
  9. Then serve them hot.

The preparation is almost identical except for one step. To make the cooking of this simple dish perfect, once the artichokes have been cleaned, you need to blanch them in acidulated water for about ten minutes. This way they will soften and the final result will be even better.

Once warm, proceed with the filling and finally bake them in the oven at 200°C for 30 minutes . A pass under the grill will make them even crispier and tastier, try it for yourself.
