Preparing the recipe for asparagus flan

  1. To prepare the flan, clean the asparagus by eliminating the woody end and removing the final outer layer of the stem with a potato peeler, until you reach the white part.
  2. Cut off the tips and then cut the stem into rounds .
  3. Take the asparagus tips and cut them in half.
  4. Place a pan with a non-stick bottom on the stove and pour a spoonful of oil and the vegetable tips inside.
  5. Cook for a few minutes, then set aside.
  6. Take another pan and pour two tablespoons of oil, then add the chopped onion; fry until golden.
  7. Pour in the pieces of asparagus stalks and cook; in the meantime, add a little water at a time , to prevent them from sticking, and season with salt and pepper.
  8. Once cooked, pour the asparagus pieces into the bowl of a mixer. Then, blend to obtain a creamy mixture.
  9. Move it into a bowl and add the milk. Mix and then add the grated cheese.
  10. Separately, lightly whisk the eggs. Incorporate them into the mixture too.
  11. Once you have obtained a homogeneous mixture, you can distribute it into serving containers.
  12. Place the molds in a baking tray, filling it half way up with water .
  13. Then cook in a bain-marie in a fan oven at 160°C for 35 minutes , until a light crust forms on the surface.
  14. Once finished, remove from the oven and let cool before serving!
