Preparation of asparagus with melted butter

  1. Wash the asparagus and remove the toughest and most leathery bottom . Try folding an asparagus in half: it should break just in the right place.
  2. To complete the cleaning, use a potato peeler to remove a very thin layer of the remaining end of the stem. The asparagus tips are delicate and should be steamed: here's how to do it even without a steamer.
  3. Tie the cleaned asparagus into one or two bunches with kitchen twine.
  4. Place them upright in a pot, preferably tall and narrow. The one where you usually cook pasta should be fine (but if you have an asparagera it's perfect).
  5. Pour water into the pan making sure that the tips are not submerged.
  6. Remove the asparagus, lightly salt the water and bring it to the boil .
  7. Return the asparagus to the pot, cover and cook for 10-15 minutes . This is the minimum time, the actual time varies according to the thickness of the asparagus: check with the tines of a fork that the tips are tender . If necessary, continue until cooked.
  8. Drain the asparagus carefully, the tips are very delicate. Dry them with absorbent kitchen paper and leave them aside for the moment.
  9. Melt the butter in a pan and season it with salt and pepper, then dip in the asparagus, let them toast for a few minutes and then serve, adding a generous handful of grated cheese.

Alternatively, you can also melt the butter with spices or aromatic herbs, pour it over the asparagus and cook briefly in the oven (at 180°C for 2-3 minutes ).
