Baked kid with potatoes

Baked kid with potatoes: the perfect recipe to serve for the traditional Easter lunch (and not only).

Are you already thinking about Easter lunch, but haven't yet decided what to bring to the table? A second meat dish suitable for the occasion is roast kid with potatoes.

The preparation is quite simple and does not require complicated steps, the important thing is to marinate the meat the night before . Marinating will cause the meat to lose part of its strong and pungent smell and will allow you to savor this food in all its delicacy . Furthermore, soaking it for several hours will make the meat softer, it will collect even more juices and it will be ready to become tender once out of the oven.

Traditionally, especially in some regions of Italy, kid is eaten during the Easter period (March 20 is even the national day dedicated to it). But why do we eat kid at Easter ? Just like the lamb, the egg and the dove, this animal is the symbol of the holiday and the liberation of the people of Israel from slavery. Some also prefer it to lamb because it is more delicate and digestible .

How to cook kid in the oven with potatoes

  1. Take the kid cut into pieces, wash it under running water as well as the celery and carrots and cut the two vegetables into pieces.
  2. In a pyrophile, combine meat and vegetables, pour over the white wine and add enough water to cover everything. Add the aromatic herbs and spices, mix well and cover the pan with cling film. Leave to rest in the refrigerator for at least 12 hours .
  3. After the resting time, take the meat back, drain it from the marinade and remove the spices. Let the meat drain in a colander and in the meantime wash the potatoes , peel them and cut them into small cubes or thin slices. Season them with oil, salt and pepper and set aside for now.
  4. Arrange the kid meat and the previously used aromatic herbs in a baking dish, sprinkle with the vinegar and give it a final stir. Add the potatoes and bake in a preheated oven at 180°C for 30 minutes.
  5. After this time, turn the meat and cook for another 20-30 minutes at 180°C . Remove from the oven and serve your kid piping hot, enjoy your meal!

The temperature is important, it is better to cook it more without raising the degrees of the oven too much , this foresight will in fact serve to keep the meat softer and not harden it.

We advise you to consume the roast kid immediately after preparation , alternatively you can keep it in the refrigerator in an airtight container for a couple of days.
