Here's a first course with a sensational taste: pasta with broccoli! It is a truly tasty dish, which can be prepared with very few ingredients, therefore also perfect for an impromptu lunch . Furthermore, this is a light pasta and also suitable for those following a vegetarian or vegan diet.

How to make pasta with broccoli

  1. Take the broccoli, wash it carefully and cut the florets which you will blanch for about 10 minutes in a pan of boiling salted water .
  2. Once ready, drain them carefully and cook them in a pan with a drizzle of oil, a clove of garlic and some fresh chilli pepper. Don't throw away the vegetable cooking water, bring it back to the boil and use it to cook the pasta.
  3. When the broccoli is nice and soft (you can add a few ladles of cooking water if necessary) and the pasta is al dente , add it to the pan with the vegetables and mix well, adding salt and pepper and removing the garlic clove.
  4. Plate up and serve!

If you want to make the dish creamier, mash some broccoli with a ladle while cooking in the pan, when you add the pasta it will blend together in an instant becoming delicious.

Delicious variations of broccoli pasta

There are some delicious variations you can make. The first is a pasta with broccoli cream. The ingredients are exactly the same , but once you have sautéed the broccoli you will have to blend it to make a cream. At this point, season the pasta: the result will be creamier than ever!

Two other well-known and beloved versions are pasta with broccoli and sausage and pasta with broccoli and anchovies. To make the first one, the steps are the same here too, but before sautéing the broccoli, cook the sausage, trying to preserve its crunchiness . Pour in some white wine and only then add the vegetables.

For anchovies, however, you can make a cooking base by dissolving them together with the broccoli and garlic. Just pay attention to the salt in the pasta, because the anchovies will already make it very tasty!


We recommend consuming the pasta at the moment, nice and warm and inviting. Alternatively, we recommend placing it in the fridge, covered in cling film, for a maximum of 1 day . We do not recommend freezing in the freezer.
