Bunny cake

The bunny cake is the trend of the moment. A carrot sponge cake filled with chocolate cream will make Easter unforgettable.

If you too are tired of the usual Easter desserts , the bunny cake will amaze you with its beauty and conquer you with its incredible flavour. The base is similar to that of sponge cake except for the presence of carrots which will give it an incredible colour.

The cream filling , on the other hand, is rather simple and made with cream, mascarpone and white chocolate . What makes the cake so beautiful, however, is the white sugar paste covering, a clean but beautiful decoration that in all respects resembles an Easter bunny.

How to prepare the bunny cake recipe

  1. First prepare the carrot sponge cake . Break the eggs into a bowl, add the sugar and whip everything with an electric whisk until the mixture is light and fluffy.
  2. Gradually add the oil, flavor with the grated orange zest and then by hand, with a spatula, incorporate the sifted flour with the yeast and the grated carrots with the fine grater.
  3. Pour the mixture into a mold lined with baking paper with a diameter of 20-22 cm and cook at 170°C for 40-50 minutes , testing with a toothpick before taking out of the oven. Let cool completely before proceeding.
  4. In the meantime, prepare the cream . Melt the white chocolate in a bain-marie. Whip the cream with an electric whisk and then incorporate it into the mascarpone with delicate movements from bottom to top. Lastly, add the melted chocolate .
  5. Cut two discs from the sponge cake and turn the top part upside down which will become your base. Fill with a one centimeter layer of cream then cover with the other sponge cake.
  6. Use the remaining cream to cover the outside of the cake.
  7. Roll out the white sugar paste until it is 2 mm thick and transfer it to the cake. Make the other decorations using pink and black sugar paste: you can do them however you like.
  8. Once the decoration is complete, place the cake in the refrigerator for at least 2 hours before serving it.

storage

The bunny cake will keep in the refrigerator for 3-4 days . We recommend bringing it back to room temperature before serving.
