Preparation of the recipe for Sicilian cauliflower pasta

  1. To begin with, wash and clean the cauliflower. Cut the central stem and leaves, cutting the florets into pieces .
  2. Take a large pan and pour the oil into it. Add a clove of garlic and also the pine nuts and raisins.
  3. Place on the heat to cook over a moderate heat for a few minutes.
  4. When they appear toasted, add the cauliflower florets and mix to combine everything.
  5. Continue cooking, adding the water; season with pepper and salt.
  6. Remove the garlic clove and cook over a moderate heat, covering with the lid , until the cauliflower becomes soft.
  7. In the meantime, fill a pan with water, salt it and bring to the boil on the stove.
  8. Once done, immerse the pasta and cook for the indicated time.
  9. Pour the breadcrumbs into a pan and toast it for a few minutes over a moderate heat.
  10. Once cooked, drain the pasta and distribute it on the plates.
  11. Season with the cauliflower and the rest of the ingredients in its sauce and, finally, with the breadcrumbs.
