Carnival chatter: the traditional video recipe


The recipe for Carnival chiacchiere is simple and delicious: let's see how to prepare the most loved dessert of this cheerful celebration!

Chiacchiere are a dessert known in many parts of the world, although with very different names, such as angel wings. Light and crumbly, they are also called frappe or lie and – above all – they are really easy to prepare . What you will have to do is knead all the ingredients, let the dough rise, roll it out into a thin sheet and then, with the help of a toothed wheel, cut them into the classic shape.

The Carnival lies are then fried in sunflower seed oil or peanut oil, dusted with icing sugar and that's it. Let's see together how to prepare the most popular Carnival recipe, for a fantastic menu! And we also have the video recipe to prepare them at home without making mistakes.


Preparation of Carnival chatter

  1. First, beat the eggs in a bowl and keep them aside.
  2. In a second bowl (or on a pastry board), mix the butter with the sugar, then add the salt, the sifted flour, the lemon zest, the liqueur and a pinch of baking powder.
  3. After working the mixture a little, add the beaten eggs and knead again until you obtain an elastic dough.
  4. Let the dough rest for about a quarter of an hour/half an hour so that it can rise, then roll it out with a rolling pin.
  5. With the help of a pasta machine, obtain a very thin sheet of dough, which you will fold and then roll out again (this operation will need to be repeated 2 times).
  6. Roll it out one last time, not exceeding a couple of millimeters thick. Advice: it must be very thin, when you think it is enough… thin it out a little more!
  7. Cut the chiacchiere from the pastry, using a serrated wheel (the one for ravioli) and without forgetting the classic two cuts in the centre.
  8. At this point, dip them in a pan of oil at 170°C/180°C and fry one or two at a time so as not to lower the temperature of the liquid.
  9. Absorb the excess oil with frying paper or absorbent paper, and then, when the chatter has cooled, sprinkle with icing sugar. Serve your Carnival chatter.

Advice and conservation
