In some areas of Calabria there is no respectable Shrove Tuesday menu without the legendary Carnival pasta omelette.

Here is a real delicacy not to be missed: the Carnival pasta omelette, a delicious recipe much appreciated especially in Calabria, but known almost everywhere in Italy. The carnival menu, aimed at eating everything and more before the long lean period of Lent, is enriched with this mega omelette prepared with pasta – usually spaghetti – and a little sausage, so as not to miss anything.

In reality you can put a bit of everything in it, even some leafy vegetables, for an even more colorful and tasty result. And what's more, you can also make an omelette with leftover pasta, a great way to reuse it in the kitchen!

How to make Carnival pasta omelette

  1. To prepare your Carnival pasta omelette, first start cooking the spaghetti in salted water. Be careful not to overcook the pasta, but leave it al dente. Drain the pasta and set it aside.
  2. In a large bowl, beat the eggs (preferably at room temperature) with a few tablespoons of milk, a little parsley or other herbs to taste, fine salt, grated parmesan, white or black pepper.
  3. Remove the pork sausages from the casing, crumble them and then insert them into the beaten eggs. Finally, add the spaghetti – you can chop them roughly with a knife if you want.
  4. Pour enough oil into a pan and then cook the mixture, also adding some cherry tomatoes cut in half and turning halfway through cooking when the eggs and meat are cooked to perfection.
  5. Serve your spaghetti omelette as a main dish for Carnival parties! Enjoy your meal!
