Today, we present a slightly more Western version of this dish: a crispy chicken poke.

Yes, instead of fish we use chicken breast , which is rich in protein. The meat must be made crunchy, thanks to a particular breading based on panko – or the breadcrumbs made with white bread. Once you have settled this ingredient and boiled the rice, prepare other components rich in nutrients; you can choose from all the variety of seasonal fruit and vegetables. Arrange all the products in a bowl , dividing them carefully. An explosion of flavors and energy awaits you in this dish!

Preparing the recipe for chicken poke

  1. The first step is to prepare the rice. Pour the water into a saucepan and add the rice grains.
  2. Put on the stove and cook over high heat for a couple of minutes, then lower the heat and let it cook for 10 minutes .
  3. Meanwhile, pour the vinegar into another saucepan. Add a pinch of salt and cook over medium-low heat, stirring to dissolve the salt.
  4. When the salt is dissolved, add a pinch of sugar. Stir and, after a while, turn off.
  5. Transfer the boiled rice to a large bowl. Pour the vinegar-based mixture over the rice, distributing it thinly .
  6. Mix gently, without crushing the beans, until they absorb all the liquid and appear shiny.
  7. Cover the bowl with a damp cloth and set aside.
  8. Wash and clean the chicken breast, then cut it into two fairly thick fillets.
  9. In a small bowl, pour the eggs, add a pinch of salt and pepper and beat them with a fork.
  10. In another pour the flour and in a third bowl pour the panko.
  11. Pass one fillet at a time, first in the flour, then in the beaten egg, finally in the panko; proceed with a double breading. Do the same with the other fillet.
  12. Fill a saucepan with seed oil and heat on the stove. When it is hot enough, dip the fillets to fry them.
  13. Fry both sides for 10 minutes ; when it is perfectly golden, dry on a tray with absorbent paper.
  14. Wash all the vegetables. Cut the green and yellow peppers into strips, cut the radishes into rounds.
  15. Wash and cut the apple into cubes.
  16. Compose the pokè bowl with chicken. Take the bowls and pour the rice on the bottom; on top of this, arrange the pieces of chicken, those of the vegetables and those of the apple.
  17. Arrange each ingredient in an orderly manner, without mixing them together. Season with lemon juice and sesame seeds, or with the ingredients you prefer.
