Poke is a traditional Hawaiian dish that, in recent times, is literally depopulating all over the world. Generally, it is prepared with rice and raw fish, accompanied by a variety of nutritious ingredients, including fruit and vegetables. Today, we present a slightly more Western version of this dish: a crispy chicken poke.
Yes, instead of fish we use chicken breast , which is rich in protein. The meat must be made crunchy, thanks to a particular breading based on panko – or the breadcrumbs made with white bread. Once you have settled this ingredient and boiled the rice, prepare other components rich in nutrients; you can choose from all the variety of seasonal fruit and vegetables. Arrange all the products in a bowl , dividing them carefully. An explosion of flavors and energy awaits you in this dish!
Preparing the recipe for chicken poke
- The first step is to prepare the rice. Pour the water into a saucepan and add the rice grains.
- Put on the stove and cook over high heat for a couple of minutes, then lower the heat and let it cook for 10 minutes .
- Meanwhile, pour the vinegar into another saucepan. Add a pinch of salt and cook over medium-low heat, stirring to dissolve the salt.
- When the salt is dissolved, add a pinch of sugar. Stir and, after a while, turn off.
- Transfer the boiled rice to a large bowl. Pour the vinegar-based mixture over the rice, distributing it thinly .
- Mix gently, without crushing the beans, until they absorb all the liquid and appear shiny.
- Cover the bowl with a damp cloth and set aside.
- Wash and clean the chicken breast, then cut it into two fairly thick fillets.
- In a small bowl, pour the eggs, add a pinch of salt and pepper and beat them with a fork.
- In another pour the flour and in a third bowl pour the panko.
- Pass one fillet at a time, first in the flour, then in the beaten egg, finally in the panko; proceed with a double breading. Do the same with the other fillet.
- Fill a saucepan with seed oil and heat on the stove. When it is hot enough, dip the fillets to fry them.
- Fry both sides for 10 minutes ; when it is perfectly golden, dry on a tray with absorbent paper.
- Wash all the vegetables. Cut the green and yellow peppers into strips, cut the radishes into rounds.
- Wash and cut the apple into cubes.
- Compose the pokè bowl with chicken. Take the bowls and pour the rice on the bottom; on top of this, arrange the pieces of chicken, those of the vegetables and those of the apple.
- Arrange each ingredient in an orderly manner, without mixing them together. Season with lemon juice and sesame seeds, or with the ingredients you prefer.
