Chicory soup is a warm and inviting dish, which can be prepared with beans, broad beans and other ingredients.
Want a truly delicious soup? Then follow us into the kitchen to prepare the chicory soup. In addition to the main ingredient of this vegetable soup, you can really indulge yourself and combine many different flavors. An idea, for example, could be to use broad beans , or other legumes, such as cannellini beans.
In today's soup we will use chickpeas, lentils and cannellini beans, and we will flavor the soup with fresh basil. Try it at home too, this dish is perfect for warming up cold winter evenings!
How to make chicory soup
- Take a pan and sauté the garlic with the chilli pepper and extra virgin olive oil. Add the canned cannellini beans, chickpeas and lentils, depriving the legumes of their preservation liquid , and then add the chicory.
- Season with salt and pepper, and at this point add a basil leaf. When the vegetables are well flavoured , start pouring in the broth and leave to cook for about 25 minutes, remembering to remove the poached garlic.
- While you wait, if you want, you can prepare some fantastic croutons: cut the bread into cubes, and sauté them in a pan with garlic, oil and chilli pepper. Let it toast well and remember to add salt at the end.
- Now all you have to do is serve the chicory soup: add, if you like, the croutons and a drizzle of raw extra virgin olive oil. Enjoy your meal !
