Cold rice with aromatic herbs and yoghurt sauce is a natural and delicious dish, which lends itself well to being served in the summer.

Cold rice with herbs can be prepared with all the aromatic plants you like best: basil, mint, fresh oregano, thyme, but also with rocket, chicory and much more. To enrich the dish there is also a delicious yogurt sauce , prepared with Greek yogurt and cream cheese and completed with finely chopped chives.

It's excellent hot, but we recommend it cold : here's the recipe!

Preparation of cold rice with herbs

  1. Start boiling the rice (basmati or other, if you prefer) in salted water.
  2. Drain it and let it cool , adding a drizzle of EVO oil to prevent the grains from sticking.
  3. Wash and chop the aromatic and/or field herbs you have available.
  4. In a frying pan, heat a little extra virgin olive oil, lightly brown the crushed garlic and then pour in the mix of herbs , so that it is flavoured. When ready, add it to the cooked rice.
  5. Let everything cool completely.
  6. Meanwhile, prepare the yoghurt dressing sauce: mix the Greek yoghurt with the spreadable cheese, the wine vinegar and the finely chopped chives. Mix everything well and then season the rice, adjusting the quantity as you like.

For a very similar recipe, but to be served hot , we also suggest spinach risotto .



We recommend consuming the first course of rice at the moment , at most you can keep it for a few hours in the fridge , well covered in transparent film. We do not recommend freezing in the freezer.
