How to prepare the pasta matta recipe

The preparation of this dough is quite simple and does not require the use of a planetary mixer.

  1. First, put the seed oil and white wine in a bowl.
  2. Then slowly add the sifted flour , mixing first with a wooden spoon and then by hand.
  3. Once the dough begins to form, transfer it to a pastry board and knead vigorously for about ten minutes. At this stage decide whether to add salt .
  4. Once the dough is smooth and homogeneous, shape it into a loaf and let it rest at room temperature for 30-40 minutes , then you can use it in your recipes.

Crazy pasta without wine

You can make crazy pasta even without using alcohol, perfect in taste and also for serving to little ones. To do this we recommend replacing the wine with the same quantity of water and leaving the quantity of oil unchanged. For a lighter version you can vary the doses a little by increasing the water and decreasing the oil although, for elasticity, we recommend not varying the weight of the ingredients beyond that.

As regards the steps of the recipe , however, you can proceed as indicated without modifications.

Cooking and preparation tips

The cooking time of pasta matta is similar to that of a traditional brisè: for a savory pie it will take around 40-45 minutes, 35-40 minutes for a strudel, 10-15 minutes for pretzels always at 180°C .

The versatility of matta pasta is also given by the possibility of inserting spices such as curry, turmeric or paprika, or fresh or dried aromatic herbs into the dough. You will get a different base every time, very useful especially for personalizing your savory pies.

Alternatively, use it to create a light version of the classic apple or, why not, pear strudel, enriching the filling with dried fruit and raisins.

This dough can be stored easily in the refrigerator for a couple of days , but must be well wrapped in cling film. You can also freeze it in the freezer , you just have to take it out a few hours before using so that it returns to its original consistency.
