Eggless crêpes are a lighter version of traditional dough, easy to make and perfect for filling in so many ways!

Today we prepare some delicious egg-free crepes. Well yes, you understood correctly, crêpes can also be made without using eggs! This is a recipe designed specifically for those who want to stay light, or for those who just can't eat them.

In this recipe we thought we would also replace the butter with seed oil, so as to further lighten this dish. With this dough you can enjoy delicious egg-free sweet crêpes in just a few minutes, or you can fill them with savory ingredients as you like! Don't worry, the batter is neutral, so you can decide even after the preparation is complete.

How to make crepes without eggs

  1. To prepare our egg-free batter, let's start with the flour. Pass it through a sieve and add it to the oil and salt. Mix with a whisk until the flour is completely absorbed.
  2. Now pour in the milk and mix all the ingredients until you obtain a homogeneous mixture.
  3. Let everything rest in the refrigerator for at least half an hour. Once the necessary time has passed, you can start cooking.
  4. Grease a pan with oil and pour a ladle of batter for each portion. Cook over low heat for about 1 minute and a half on each side, until you have finished the dough.
  5. Stack the light crêpes on top of each other and fill them as you like. Enjoy your meal!

If you are vegan you can prepare crêpes without eggs and milk, replacing the latter with a vegetable drink and following the doses we gave you above! Furthermore, to make them more chromatically similar to the original version we recommend adding 1-2 teaspoons of turmeric powder .

storage

You can keep the crêpes already made, but not filled, even for 1-2 days in the fridge , remember to place them in a container with a lid, spaced apart from each other with a sheet of baking paper so that they don't stick.

Alternatively, you can also freeze them : to do so, place them in a container or ice bag spaced one by one with a sheet of baking paper, then place in the freezer.

Crêpes without eggs: ideas for filling them

As you may have understood, the ones we made are both savory egg-free and sweet crepes, the difference is the filling . If you have a sweet tooth and want to create a wonderful dessert, you can use jam, Nutella, chocolate topping or even just a veil of honey and icing sugar .

For the savory ones, however, leave room for imagination: a spreadable cheese is certainly perfect, which you can combine with vegetables, ham, cold cuts, salmon or any other ingredient you like!
