Delicious and healthy, sugar-free jam is very simple to prepare

Strawberry jam

Sugar-free jam is perfect for all those who are on a diet but can't give up dessert. Let's find out how to prepare it!

Fortunately, more and more people are paying attention to the label, also looking for healthier products for jams, perhaps prepared without added sugars . However, not everyone imagines that it is possible to prepare homemade sugar-free jam, perfect for breakfast or for preparing fantastic desserts.

The preparation is completely similar to that of traditional jams. You will just have to be careful to use ripe fruits whose sugar content is higher, and always add an apple for every half kilo of fruit so that the pectin contained in it thickens the jam.

How to prepare sugar-free jam

Like all recipes that feature fruit, we recommend using organic fruit so you can leave the skin on and enjoy the nutrients it contains. Wash it well under running water, cut it into pieces and leave to macerate in a bowl with the lemon juice for an hour.

Then transfer the fruit into a pan with all the water released and also add the glass of water indicated among the ingredients. Cook over low heat for 45 minutes , testing the saucer to see if the jam has the right density. All you need to do is drop a few drops onto a slanted saucer: if it thickens immediately you can turn off the heat. If it is too liquid you can add another teaspoon of lemon juice.

Homemade sugar-free jam is ready. Transfer it into sterilized jars while still boiling and close them with the appropriate caps. Turn upside down and let the vacuum form. If you like, you can also blend the jam before storing it to obtain a more uniform consistency.

Use it to fill delicious croissants ! Also remember that you get the best results with fruit with a high sugar content : try sugar-free fig jam or sugar-free orange marmalade.

Tips for a perfect jam

  • To check that the jam is ready, test the saucer . Take a teaspoon of hot jam, place it on a saucer and tilt it: if the mixture moves slowly , the jam will be ready.
  • It is important to sterilize the jars for your homemade sugar-free jam. In a large pan with high sides, place the jars and lids. After that, fill it with water, holding 2 fingers from the edge and bring everything to the boil for 25 minutes . Let them cool, remove from the pan and dry.
  • Finally, a few words on how to vacuum jars . After sterilizing them, fill them with jam so as to leave a couple of cm between the jam and the edge. Place a pan with high sides full of water on the heat, bring it to the boil and immerse the jars for about 30 minutes. There must be 2 inches of water above the jars . After completing this procedure, check that the lids have a slightly curved center (U-shaped): this means that the vacuum will have formed.

storage

The jam made following this procedure, without the addition of sugar, can be kept for several months in the pantry (in a cool place away from light sources). Once opened, the jam must be stored in the refrigerator and consumed within a week. We do not recommend freezing in the freezer.
