Delicious gluten-free coconut sweets: look how beautiful (and how delicious!)

Gluten-free coconut cakes

Gluten-free foods have now entered the diet of many Italians. Let's see how to prepare coconut sweets, perfect for celiac friends.

Today we discover together one of the easiest gluten-free sweet recipes ever. In fact, to prepare these coconut sweets, only three ingredients will be enough: coconut flour (which we know is among the gluten-free foods), sugar and egg whites . This dessert is the clearest example that not only following a gluten-free diet does not mean giving up taste, but also that very little is needed to serve a truly delicious dessert.

It therefore goes without saying that this preparation is also perfect for recycling leftover egg whites from other preparations. The classic example that leads to a surplus of egg whites is custard, but from today we will feel less guilty about preparing it. Indeed, we will also have the excuse to make two different desserts!

How to prepare the coconut sweets recipe

  1. Preparing this recipe is almost disarmingly simple. No complex operations, no strange utensils: just a bowl, a spatula and a pastry bag with a star nozzle .
  2. Place the coconut, sugar and egg whites in a bowl and mix well to obtain a floury mixture. Let it rest for 15 minutes so that the coconut absorbs the moisture from the egg white.
  3. Then transfer it into a pastry bag fitted with a star nozzle and pipe small mounds of dough onto a baking tray lined with baking paper. If you don't have a pocket, form small balls of dough with your hands: the taste certainly won't be affected!
  4. Cook these coconut cakes for 10 minutes at 200°C and take them out of the oven when they are golden brown. Wait until they are completely cool before removing them from the pan or they will tend to break.
