It goes without saying that this preparation is also perfect for recycling leftover egg whites from other preparations. The classic example that leads to an excess of egg whites is custard, but from today we will feel less guilty about preparing it. Indeed, we will also have the excuse to make two different desserts!

How to prepare coconut cookies recipe

  1. Preparing this recipe is almost disarmingly simple. No complex operations, no strange tools: just a bowl, a spatula and a pastry bag with a star nozzle .
  2. Put the coconut, sugar and egg whites in a bowl and mix well to obtain a floury mixture. Let it sit for 15 minutes for the coconut to absorb the moisture from the egg white.
  3. Then transfer it into a pastry bag fitted with a star nozzle and dress small piles of dough on a baking tray lined with parchment paper. If you don't have a pocket, form small balls of dough with your hands: the taste will certainly not be affected!
  4. Cook these coconut cakes for 10 minutes at 200°C and take them out of the oven when they are golden brown. Wait until they are completely cold before removing them from the pan or they will tend to break.
