How to prepare the fart pasta recipe

  1. Prepare a sauté by chopping celery, carrot and onion and browning it in oil. Then add the sausage removed from the casing and crumbled with your hands, the ribs and the rind cut into small pieces.
  2. Add the white wine and when you no longer smell alcohol, add the beans, peeled tomatoes and tomato puree in that order. Season with a pinch of salt and chilli to taste and leave to cook for an hour.
  3. Then cook the pasta in plenty of salted water for the time indicated on the package. Once ready, drain it and sauté it in the pan with the sauce, adjusting the consistency of the latter with a little cooking water .
  4. Serve completing with a sprinkling of grated pecorino .
