How to prepare the recipe of Molise mpigna

  1. First boil the potatoes in their skins starting from cold water until they are soft if pricked with a fork. It will take around 30-40 minutes depending on the size. While they are still hot then mash them with a potato masher (it is not necessary to remove the peel first because it will remain inside the utensil) and let them cool before continuing with the recipe.
  2. In a large bowl, combine the flour, sugar, potatoes, eggs and yeast dissolved in slightly warmed milk. Scented with the grated lemon zest .
