'Mpigna Molise

The ‘Mpigna Molisana is a donut-shaped leavened cake whose dough also contains boiled potatoes to give it further softness.

Molise mpigna is a donut-shaped cake prepared with a leavened dough in which there are also boiled potatoes. It is precisely this characteristic that makes them so special and soft and if you add to this that they are very simple to prepare then the game is done. You will have to have a little patience for the leavening but we can guarantee that the traditional potato cones will be worth all your time.

In all likelihood, the idea of adding potatoes dates back to a time when this food had a much lower cost than that of flour. Hence, the dough was “cut” in order to obtain a cheaper one, also suitable for the poorest sections of the population. Curious to find out how this typical Molise dessert is prepared.

How to prepare the recipe of Molise mpigna

  1. First boil the potatoes in their skins starting from cold water until they are soft if pricked with a fork. It will take around 30-40 minutes depending on the size. While they are still hot then mash them with a potato masher (it is not necessary to remove the peel first because it will remain inside the utensil) and let them cool before continuing with the recipe.
  2. In a large bowl, combine the flour, sugar, potatoes, eggs and yeast dissolved in slightly warmed milk. Scented with the grated lemon zest .
  3. Mix first with a spoon then by hand adding, when the dough begins to compact, the butter a bit at a time.
  4. As soon as you get a homogeneous dough, put it to rise in the oven off with the light on for about 3 hours or until it has doubled in volume.
  5. Divide it into 10 equal parts , form loaves of one centimeter in diameter and close them into a ring, leaving them to rise well spaced for an hour on a baking sheet lined with parchment paper.
  6. Brush the Molise pine cones with the yolk and cook at 180 ° C for 15 minutes . Serve them after they have cooled down.
