How to prepare drunk pasta recipe

  1. Start by cooking the chosen pasta, spaghetti is ideal, in plenty of salted water for 3 minutes.
  2. Separately, pour the red wine into a large pan, perfume with the bay leaf and let the alcoholic part evaporate for 2-3 minutes over high heat.
  3. Drain the pasta keeping aside the cooking water and put it in the pan with the wine.
  4. Continue cooking for another 5 minutes (depending on whether you like it al dente or more tender), adding the cooking water kept aside, little by little, if it dries out too much. The cooking of drunken pasta resembles in a certain sense that of risotto.
  5. When cooked, divide the pasta into plates and complete as desired with a sprinkling of parmesan .

We have proposed a basic recipe, but some variations include the addition of cream to red wine to obtain an extra creaminess.
