How to prepare the recipe for Easter Strozzose donuts

  1. First, break the eggs into a bowl and beat them with an electric whisk until they are light and fluffy.
  2. Add the sugar and mix until combined, then pour in the oil, the grated lemon zest, the vanilla extract and half the flour.
  3. Add the liqueur, set the whisks aside and continue kneading with a wooden spoon, adding the remaining flour. Finish working the dough on the pastry board until you obtain a homogeneous dough.
  4. Divide it into 8 parts , give it the shape of a ball and then, inserting your fingers in the center, widen the hole to create the donut.
  5. Bring a large pan to the boil and boil the donuts (maximum two at a time) for about 5 minutes. As they are ready, place them on a clean, washed cloth without fabric softener. Let them rest for 12 hours or overnight.
  6. With the help of a sharp knife, cut the donuts all around as if you wanted to open them like a sandwich without reaching the center. Cook them at 180°C for 30 minutes .
  7. In the meantime, prepare the icing: lightly whip the egg white, add a spoonful of lemon juice and the icing sugar and mix everything until you obtain a thick icing.
  8. Once the donuts are ready and cooled, dip half of them in the icing and decorate with sprinkles as desired.
