Aubergine and cherry tomato tagliatelle

Tagliatelle with aubergines and cherry tomatoes, a simple and very tasty first course of pasta for your summer lunches. Here are all the preparation steps!

In this period, aubergines and tomatoes are never lacking on our tables. Eggplant and cherry tomato pasta is one of our quick and easy recipes with fresh vegetables. The realization of this dish is very simple and you can use the pasta shapes you prefer. In addition to the aubergines, you can also add other grated vegetables such as zucchini or carrots.

Preparation of pasta with aubergines and light cherry tomatoes

  1. First wash the aubergine , clean it and cut it into cubes, then wash the cherry tomatoes and cut them into wedges.
  2. Take a shallow frying pan, pour a drizzle of olive oil on the bottom, a whole clove of garlic and brown for a few seconds.
  3. Add the aubergines, sprinkle with salt and pepper and cook the aubergines for 5 minutes.
  4. Remove the garlic, add the cherry tomatoes and cook for another 5 minutes.
  5. Once cooked, add the chopped rosemary and in the meantime cook the pasta in salted water.
  6. When it is al dente, drain it and quickly sauté it in the pan with the aubergine and cherry tomato sauce.

Delicious variations of eggplant and cherry tomato pasta

  • Pasta with aubergine sauce, cherry tomatoes and olives: for this traditional variant you will need 50 g of pitted green (or black) olives. After putting the eggplant to brown in the pan, add the olives so that they taste better . The rest of the preparation remains unchanged.
  • Pasta with aubergines, cherry tomatoes and tuna: add 150 g of tuna to the ingredients of the preparation. For convenience we have chosen the canned one, and we have eliminated its oil. Add it to the pan after having browned the aubergines and cherry tomatoes: you will taste what a flavour!
  • Pasta with aubergines, cherry tomatoes and bacon: add 50 g of this ingredient to the preparation. Brown the bacon in a non-stick pan so that it releases its fat . After that, remove it from the pan and cook the aubergines and cherry tomatoes in the same pan. Finally, continue as per recipe.


Keep this tasty first course in the refrigerator in an airtight container for 1-2 days.

Alternatively you can prepare the roasted aubergines in the microwave .
