The recipe for Knam’s chocolate cake is composed solely of a chocolate mousse and a marquise, that is a thin gluten-free sponge cake base that serves to dampen the overall creaminess of the preparation. The ingredients used are also quite common so you really have no reason not to try the Afrika pie.

How to prepare the Afrika cake recipe

  1. Combine the egg yolks with 200 grams of powdered sugar in a bowl and whisk them with an electric whisk. Separately, with clean whips, whip the egg whites with the remaining 400 grams of powdered sugar.
  2. Incorporate the egg whites into the yolks with gentle movements from bottom to top and add a little to fly the sifted starch and cocoa.
  3. Line the baking tray of the oven with the appropriate paper and pour the marquise mixture, leveling it well and forming a thickness of half a centimeter .
  4. Cook at 200 ° C for 9 minutes and once ready sprinkle with granulated sugar.
  5. While the base cools down, dedicate yourself to the mousse . Chop the dark chocolate with a knife and melt it in a bain-marie making sure that the temperature remains between 45 ° C and 50 ° C. To do this, help yourself with a kitchen thermometer.
  6. Semi-whip the cream with an electric whisk and add it to the chocolate.
  7. Using a 22-24 cm diameter pastry ring, make a marquise disc and place it in the mold. Cover with the mousse, leveling the surface and let it rest in the refrigerator for 2 hours.
  8. Then remove the mold and complete with the decoration : the chocolate chips on the sides and a sprinkling of cocoa on the surface.
