Here is the Father's Day cake, a no-bake dessert covered with a very simple icing and decorated with a chocolate mustache!

On March 19 we celebrate St. Joseph, Father's Day. It is a perfect moment to spend with the family, all gathered around the table, setting aside the frenzy for at least a few hours. But there is no self-respecting party without a dessert and that's why we want to reveal to you how to prepare the most beautiful Father's Day cake ever .

This no-bake cake , completed with a coffee-flavored mirror glaze, is perfect for making the father of the family feel important. To the detriment of the appearance, it is a simple cake obtained from a sort of cheesecake which is then glazed and decorated . You will discover that icing the dessert is easier than you imagined and you will have a lot of fun making two beautiful mustaches to decorate the Father's Day cake.

How to make Father's Day cake recipe

  1. To prepare this cold cake, start from the base. Blend the biscuits until they are reduced to a powder using a food processor or by placing them in a food bag and beating them with a rolling pin.
  2. Transfer them to a bowl and add the melted butter , mixing well.
  3. Pour them on the bottom of an 18 cm diameter springform pan whose base is lined to size with a sheet of parchment paper.
  4. Press well with the back of a teaspoon to obtain a uniform thickness.
  5. Transfer it to the refrigerator for an hour.
  6. In the meantime, soak the isinglass in cold water for 10 minutes.
  7. Melt 200 g of dark chocolate in a bain-marie, then pour it into a bowl.
  8. Bring the milk to the boil with the sugar , then add the squeezed isinglass .
  9. Pour it all over the chocolate in three times, stirring constantly, and bring it to a temperature of around 35°C (since it is similar to body temperature, you can measure it by hand, simply by touching the cream).
  10. Semi whip the cream and add it to the previous mixture, mixing gently from bottom to top with a spatula.
  11. Pour the mixture onto the now cold biscuit base and make sure that the surface is smooth.
  12. Transfer the dessert to the refrigerator for at least 4 hours . The longer it stays, the better.
  13. Once it has completely cooled, remove it from the mold and place it on a rack .
  14. Prepare the coffee glaze by mixing the icing sugar and the espresso until you get a smooth cream. Adjust the amount of coffee in order to obtain a glaze that is not too thick.
  15. Pour it over the very cold cake, letting it run along the edges , completely covering the cake.
  16. Put back in the fridge and dedicate yourself to the mustache. Cut out the shape on the parchment paper and place it on a cutting board.
  17. Melt the chocolate in a bain marie, then pour it over the shape and spread it as thinly as possible with a spatula. You have to get a more than uniform layer.
  18. Gently lift the mustache template and place it on a clean plate.
  19. After a few minutes, when the chocolate has solidified , very gently remove it.
  20. Place it on the cake only when it has completely cooled .

storage

Father's Day cake must be kept in the refrigerator for a maximum of 2-3 days . We advise you to cover it with a candy hood to prevent it from absorbing other odors from the refrigerator.
