Figs Cake

Fresh fig cake: a recipe to be enjoyed at sunset on a late summer evening. Simple to prepare, it has a truly unmissable taste!

Do you love sweet recipes with fresh figs? So here's the one for you: the fig cake, a soft and fluffy dessert prepared with fresh fruit. Simple, indeed very simple and really very genuine, it has a traditional taste, which brings us back to those sweets that our grandmother used to make us when we were children.

Prepare it for a snack and also for breakfast: it will help you face the morning (and the day) with the right energy !

Preparation of the cake with Greek yogurt and figs

  1. Let's start by whipping the eggs together with the sugar with an electric whisk. Work them well until the sugar is incorporated and you have obtained a clear and frothy mixture .
  2. Now add the liquids, milk and seed oil always with the electric whisk activated and complete with the lemon zest.
  3. Sift the flour and baking powder and add them to the liquid part a little at a time, incorporating them with a spatula so as not to disassemble the eggs too much .
  4. Now it's time for figs. Wash them, dry them and cut them as you like. Flour them lightly and insert them into the dough, leaving 2-3 aside .
  5. Mix well and pour all the mixture into a cake pan of about 26 cm in diameter .
  6. Turn on the oven at 180°C and, while it reaches temperature, add the remaining figs cut into slices right on the surface of the dessert.
  7. Bake in a static oven and let the soft and easy fig cake cook for about 30-40 minutes .
  8. Once ready, remove the dessert from the oven and let it cool before unmolding it and serving it on the table.

Alternatively, if you can no longer find large, fleshy figs, we suggest you prepare the cake and stuff it with fig jam !

Variations of the cake with figs in the dough: with the addition of walnuts or yoghurt

As you may have noticed, our quick and easy fig cake is within everyone's reach. If you want to raise the taste bar a bit, however, you can also think of making two equally easy variations:

  • The fig and walnut cake. To make it, all you have to do is add about 100 g of coarsely chopped walnuts and add them to the dough to give the cake that crunchy note that will win you over.
  • Finally you can try the recipe with the addition of yogurt. Eliminate the milk and add a 1 25 ml jar of natural white yogurt to make the cake even softer.

storage

We recommend keeping the summer cake for a maximum of 2-3 days in the fridge , under a special glass bell for desserts. We do not recommend freezing in the freezer.
