Fish soup is a dish that always pleases everyone, and is good all year round and on every occasion.

Fish soup is a tasty way to enjoy what the sea has to offer. It can be done with practically any variety of fish that you can find at the fish market, but the rule to follow in any case is only to choose the freshest fish possible.

For example, we have chosen to use monkfish, monkfish and also add cuttlefish, prawns, mussels and clams. Everything is then seasoned and accompanied by tomato .

This soup is perfect if accompanied with freshly prepared croutons, so that it becomes a real single dish, complete with proteins and carbohydrates .

How to make fish soup

  1. First of all we have to prepare the fish and clean it well (if you can, let your trusted fishmonger do it for you). Remove the head, fins and innards from the hens (or hens). Also clean the monkfish by removing the skin and the thorns and the cuttlefish, depriving them of the internal sac.
  2. Once everything is cleaned, cut the monkfish and the cuttlefish into small pieces, instead the tub gurnard into fillets.
  3. Clean the prawns by removing the head and exoskeleton, then remove the black fillet of the intestine and set aside.
  4. In a separate pan, open the mussels and clams (well purged and cleaned) simply with a drizzle of oil, a little pepper, salt to taste and parsley . Once they are open, set them aside in a bowl and strain the cooking liquid.
  5. Now heat the oil in a large saucepan with the garlic and the parsley stems (you can also add some chopped onion if you like)
  6. When the sauté is ready, add the fish in pieces and brown it well, then pour in the white wine and add pepper and salt (do not abuse it as they are salt water fish).
  7. So insert the tomato and if you like the pepper . Leave to cook for 30/40 minutes, adding the liquid from the mussels and clams.
  8. Towards the end, remove the garlic, add the prawns and, after about 4-5 minutes, also the mussels and clams.
  9. Finish with chopped fresh parsley.
  10. Serve with a drizzle of raw oil and sliced ​​toasted bread . Enjoy your meal!

If you want an even tastier seafood soup, don't forget to make the comic too . To do this, chop the celery, carrot and onion and fry them in a saucepan with a drizzle of oil. Once hot, add all the fish and shellfish waste (except for the prawn fillets and the cuttlefish bag) and let it brown for 2 minutes, then add some peppercorns and cover with water. Bring to the boil and simmer for 1-2 hours , removing the foam that forms on the surface with a ladle.

Quick fish soup

If you want a super-fast dish, you can make a frozen fish soup, perhaps using already opened mussels , cod or other already cleaned fish. In this case, flavor the sautéed onion and celery, add the fish, deglaze with the wine and then cook with the tomato for about 15 minutes!

Enjoy your fish soup (both versions) while it's still hot. If you have any leftover, you can keep it in a container with an airtight lid and in the refrigerator, for a maximum of 1-2 days . You can freeze it in the freezer if you have used all fresh and quality ingredients.
