The preparation essentially consists of making the chocolate-based filling and then cooking it completely in a casing which, depending on the variations, can be shortcrust pastry or brisée . The result is a creamy consistency, halfway between a pudding and a traditional cream.

How to prepare the chocolate flan parisién recipe

  1. Take the egg yolks and transfer them to a pan together with the sugar and mix with a kitchen whisk . Move the pan to the heat and cook over a low heat until the sugar has dissolved.
  2. Gradually add the flour and starch, stirring constantly, then the milk, cream and dark chocolate chopped with a knife. Flavor everything with vanilla extract.
  3. Cook over low heat , stirring often, until you obtain a thick, smooth cream. Let it cool almost completely.
  4. Unroll the shortcrust pastry and transfer it with the baking paper into a 24 cm diameter springform pan .
  5. Pour the cream and level it then cook at 180°C for 1 hour . Leave the dessert to cool in the oven with the door open, then serve it cut into slices.

storage

The chocolate flan parisién should be stored in the refrigerator for a maximum of 3 days.
