Preparation of bluefin tuna tartare with mango

  1. Let's start with the preparation of the mango: clean the fruit by removing the outer skin and the stone and cut the mango into small cubes with a knife, leaving them to rest in a cool place in the refrigerator.
  2. Now, take the lime and grate the zest being careful not to scratch the white parts, which would give the dish a too bitter taste. At this point, squeeze the lime and lemon and mix the two juices.
  3. Also chop the shallot very finely, finally take the tuna fillets and cut them into small pieces with the help of a sharp knife.
  4. Dip the tuna in the lime and lemon juice and add the mint, lime zest, shallot, a pinch of salt and pepper and a drizzle of extra virgin olive oil, leaving it all to flavor for a few minutes.
  5. Now all you have to do is plate up: with the help of a pastry ring, make a sort of turret with the marinated tuna, and then decorate with the pieces of mango, sesame and two leaves of mint. Bon appetit !
